Our penultimate bake from Baking with Dorie by Dorie Greenspan features the Cheese-Swirl Babka Buns. The buns are made from the brioche dough, but have a savory rather than a sweet filling. The filling is made from ricotta, cream cheese, and Parmesan with some shallots and green onions and some tiny cubes of Cheddar. The topping is a Cheddar streusel with some chopped walnuts.
These buns were a nice change from the usual sweet babkas, but, I think I prefer a chocolate or fruit filling just the same.
