Daring Bakers: No Feet + No Shine = Amaretti

The 2009 October Daring Bakers’ challenge was brought to us by Ami S. She chose macarons from Claudia Fleming’s The Last Course: The Desserts of Gramercy Tavern as the challenge recipe.

These were supposed to macarons.

The uncooked batter looked fine:

Except they didn't grow feet and the baked tops looked like the surface of the moon.


I have made macarons before with better results. While I still didn't get the shiny tops then, I did get well-developed feet.

Until I figure out where I went wrong, I'll be a bit gun-shy about making these again, which is a shame.

Even though they tasted fine, but I decided not to waste my time or the ingredients to fill a failure.

So, this year there will be no Halloween macarons.

Uh oh. They didn't work for you? Hmmm - no hope for me then.

Glad I didn't even think of attempting these.

i used hazelnuts, ground them myself and they didn't work out any better. the flavor was good but i am sure that the texture was wrong-they were nothing like other macarons that i have made before. i didn't bother filling them either but that's a different story.

Amaretti are pretty tasty though, right? I'd vote for a redo, using a different recipe - Syrup & Tang's, or Helen of Tartelette's have never let me down!
