The Kitchen of the Month for June is Tanna
of My Kitchen in Half Cups. Tanna chose
Bee Keeper’s Pain de Mie, adapted from Martin Philip’s Breaking Bread. The recipe
calls for a Pullman pan, which I don’t have, so I used a 9x5” loaf pan and
halved the recipe. The one ingredient I
was lacking was the wildflower tea. I
substituted some rose/hibiscus tea, although there was no evidence of that
flavor in the final bread.
The bread, itself, had a nice crumb
and good flavor. I would make it again
and leave out the tea, since it didn’t add anything to the final bread. It’s also worth remembering that this is a
two-day process, making the biga on the first day, and the bread on the second
day. Not difficult at all, but time
management is key.
