TWD: Espresso Chocolate Shortbread Cookies

The final August selection for Tuesdays with Dorie is the melt-in-your-mouth Espresso Chocolate Shortbread Cookies.

One taste and it's like you've died and gone to heaven.

No special issues to report. Instead of chocolate chips, I chopped up one of my Valrhona bittersweet chocolate bars. I will so do that again.

These shortbread cookies are perfect for bake-on-demand desserts. I keep the plastic bag in the refrigerator and only measure and cut what I'm going to bake. I'm also using the toaster oven, lining the tray with nonstick foil. This way I don't add extra heat to the kitchen on those toasty summer days.

Otherwise, we would eat the whole lot of them in one sitting.

I'm sure about that.

My camera decided to take blurry photos this time, hence the lack of pretty cookie pictures. Check out the TWD blog for oodles of nonblurry photos.

Thanks, too, to Donna of
Life’s Too Short Not to Eat Dessert First for a winning cookie choice. These cookies will definitely go on the 'bake again' list.

How can this be the last recipe for August???? Where did August go???? Your cookies look great...the guys were eating them hand over fist as I was pulling them out of the oven. I told them they were supposed to cool...they weren't buying it.

Your cookies look wonderful and delicious! I like your idea of baking them in small quantities and keeping the rest in the refrigerator. Smart!

Impressive use of the toaster oven! I don't like coffee, but these cookies were so good. Thanks for the weight loss support!

Love the toaster oven idea. I've seen silpats for a toaster oven. That would be cool too if you do this very much.

Thanks for baking along with me this week Judy. Your photos look just fine to me. I despair that I will ever develop the skill to have my photos reflect the deliciousness of the treats I am baking - you do that so well.

You and me both! These were too good!

Your standards for photos are much higher than mine...if I can tell what the object is, it's a good photo!

These were good little cookies weren't they. And no they didn't last long. good thing I only made 1/2 recipe. But a good idea to freeze them and bake later.

Look just fine to me.

One sitting easy. That is if the dough even makes it to cookies. I love this recipe.
