TWD: Double Apple Bundt Cake

What a difference one week makes!

This time last week, the temperature outside was 105 degrees and the temperature inside was 100 degrees. Too hot to cook or eat.

Today, it was cloudy and misty and cool. The inside temperature didn't even reach 70. Woo hoo! Perfect weather!

Just the kind of weather for fall desserts.

Apple desserts.

Like a double apple bundt cake.

This cake was easy to make. I did substitute currants for raisins, and I used some of my homemade apple butter. I was also liberal with the spices, but would be even more liberal the next time. I want to feel a tang.






To finish the cake, I made an orange-flavored glaze, using freshly squeezed orange juice and a few drops of orange oil.



I also let the cake rest overnight to develop the flavors, which truly improve with age. We liked it much better the older it got.

Of course, there is also less of it the older it gets. My guess is, that by the time it is really in top flavor form, it will be gone.

Oh, that looks good, love the color you got on yours. I think I should have drizzled, this drizzling makes it look extra special. Need to get into this oil thing, orange oil just sounds like it HAS to be fantastic and I am missing out. Going in search of it, thanks for the tip. Wonderful looking cake over here!

YOur drizzle looks great, love the cake too! This recipe was a perfect fall treat. Im glad it cooled down for you!! It's been in the mid 80s here in Idaho ..today it's 75!

Wasn't this one delicious? I was so surprised by how much I liked it, not having been a fan of the oatmeal breakfast bread (which was made with applesauce). There is no day 4 around here...I took the cake to work and it vanished quickly.

Your cake looks gorgeous! I didn't get this made in my frenzy of packing and moving, but I regret it now. I'd like to try it soon, and definitely with apple butter.

I know, wasn't this week's cool weather lovely?? Too bad it's going to be super hot by Sunday again. :) Love the look of the glaze dripping down.
