TWD: Coffee Break Muffins

This week's Tuesdays with Dorie recipe was Coffee Break Muffins, chosen by Rhiani of Chocoholic Anonymous.

The coffee flavor was very mild, even with the addition of one cup of brewed coffee and some espresso powder. I might increase that next time. To dress them up a bit, I added some cinnamon chips.



Even after baking the muffins for the required 20 minutes, they were moist and tender. The flavor and the texture held up nicely, mellowing out after the first day.


They were a hit in this house, disappearing very quickly. My daughter took the last two this morning, on her way out the door for work. Two. Leaving zero for me. :( Looks like I will have to make them again, and soon.

Yummy! I wouldn't have thought of adding cinnamon chips but they would be a terrific addition. I've made these a couple of times...they keep disappearing and then there aren't any left for me.

Funny I allmost added the cinnamon chips too! Im glad they were good! I loved this recipe too and will make them again.

I thought about cinnamon chips, too. But I went with chocolate instead. Pretty good!

its better for them to be all gone and have to make more (knowing they'll be eaten again) than making too many of something no one wants to touch. then you have to give (read: shove) them to unsuspecting people ;)

I KNOW I would love these with cinnamon chips. Brilliant. Mine were rather mild too and that would have perked up the flavor.

Cinnamon chips sound like they would bring this over the top. I love cinnamon.
