Oatmeal Bread





For this month's Bread Baking Day challenge, Astrid, of Paulchens FoodBlog, chose oatmeal as the featured ingredient. For many years now, I've been making a quick oatmeal bread that goes well with breakfast, lunch, or dinner. As a change from all the yeast breads I've been making, I thought I would share this easy recipe.

Oatmeal Bread

1 cup all purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup rolled oats (oatmeal)
1/4 cup butter
3/4 cup buttermilk

Sift flour with sugar, baking powder, baking soda, and salt. Stir in rolled oats. Cut in butter. Add buttermilk all at once and stir until smooth. Spread mixture into a well-greased 8-inch square pan. Bake at 400 degrees (F) for 25 to 30 minutes, or until golden brown. Cut while warm.

Gee, I don't check your blog for a couple of days (shame on me), and I get back to find that you've been cooking up a STORM! Everything looks great! And to answer a question you left on my blog, I don't have a Facebook page. Believe it or not, I've never been to Facebook or My Space!

A quick bread! Never a bad thing :) What is the texture like? A bit like a scone?

It's a nice change of pace to see a quick bread recipe that only has a little sugar. Great with tea, too, I imagine.
