This is a tale of two cakes. Neither one looks like the photograph in Baking with Dorie.
When I made the first cake, I wasn't happy with the texture of the cake itself. It was dense and fudge-like, resembling a brownie more than a cake. I used regular cocoa powder for the cake and frosting, but the color of the frosting seemed to be too light. I also didn't use enough of it for the filling, because usually there is never enough to both frost and fill a cake.
I decided to make the cake a second time. The texture wasn't quite as dense, but it still didn't have a loose crumb. I used black cocoa powder this time, which gave the frosting a weird color. I made sure to use enough for the filling this time.
Perhaps the cake is supposed to be dense. Even though it was a tasty cake, I'm not sure if I'll ever make it again.

I love the rich color of the interior.
So interesting!! My cake looks like your first one and even though everyone loved it...me being a chocolate lover...didn't quite hit the mark with me personally. Wasn't as rich as I was hoping for. I also thought the crumb dense...but not what I would call rich like a brownie. So funny how we all feel differently about tasting things...my family all loved this one! always fun to try them all out and see how it goes! (Kim)
Sorry this wasn't a hit with you. Since the recipe has quite a bit of liquid I think it will always be dense.
I would gladly sample a slice of each :)
