For the second bake of July, I made the Lamingtons. I've known about these little cakes for many years, but never actually had one or baked one. That won't happen any more!
The sponge turned out great, and, because I had my dipping and coating station set up quite well, finishing the cakes was a breeze. Their taste and texture only improved the longer they sat. On the second day, there was little crunchy bit on the edges that was yummy.
I will add double stars to this recipe!
