For the second January recipe for Tuesdays with Dorie, I made the Grain and Seed Muffins. I decided to make the whole recipe (12 muffins) and put most of them into the freezer for safe-keeping. They reheated very nicely when I wanted a treat. I did use avocado oil as a substitution as well as golden raisins. Luckily, I had all the ingredients either in my pantry or in the freezer. While I wasn’t sure how these would taste, I knew I could trust Dorie’s recipes, and will definitely plan on making them again in the future.

Weren't these delicious? I wasn't really expecting to like them this much. I started out making a half recipe, got distracted and then had to finish it all by making a full recipe...this happens from time to time. Anyway, they won't go to waste. Freezing is a good idea, thanks for thinking of it for me. Yours look so cute tucked in that little basket...perfect welcome to morning! Did I mention yet how good it is to be back baking with you?

a very tempting muffin basket! a have a couple still in the freezer, too, and am happy for that.
if I had all the ingredients than I would definitely be able to makeit :) when I first looked at it I was thinking oh I could sub this or that but then it would them not as healthy for sure!
I was hoping someone had freezed them! I wouldn’t mind being able to pull these out for company.
I hope you can keep enjoying your muffins. It is nice to have something in the freezer.
